What is Golden Sella Basmati Rice?
Golden Sella is a form of parboiled Basmati rice. Unlike Steam Basmati (which is milled directly from the husk), Golden Sella undergoes a parboiling process before milling — the paddy is soaked in water and then steamed under high pressure before the outer husk is removed.
This parboiling process is what gives Golden Sella its characteristic golden-amber colour. The pressure and heat drive pigments from the outer bran layer into the starchy endosperm of the grain, permanently tinting it. The result is a rice that is distinctly golden when dry and cooks to a slightly darker, firmer grain than white Steam rice.
Golden Sella vs Standard Sella — What is the Difference?
Both Golden Sella and standard Sella (also called White Sella) are parboiled Basmati rice. The key difference is the intensity of the parboiling process.
Standard Sella uses a lower-pressure steam treatment, which partially gelatinises the starch and produces an off-white, slightly translucent grain. Golden Sella uses higher pressure and longer soaking — deeper gelatinisation produces the golden pigmentation and an even firmer grain texture.
In practical terms: Golden Sella is firmer, more golden in colour, has a longer cooked grain, and commands a higher price than standard Sella. For large-volume cooking where grain separation and appearance are critical, Golden Sella is the preferred grade.
